The Gallic menu? Beef Bourguignon with garlic roasted baby potatoes and Chantenay carrots, those fat oval-shaped deeply-flavoured carrots.
To finish a luscious Tarte au Citron with a warm berry compôte and vanilla crème fraiche.
The heartiest of French casseroles involves cooking beef slowly with wine, herbs and bacon (lardons), the dish one of many examples of peasant dishes being slowly refined over the centuries. The wine choice is, of course, is from Burgundy.
